Chewy Chocolate Cookies

Ingredients:

  • 375g YesYouCan Essential Chocolate Cake mix
  • 1/2 cup vegetable oil
  • 1/2 teaspoon kosher salt
  • 2 eggs or Vegan Egg Replacer
  • 3/4 cup chocolate chips

Directions:

  1. Preheat your oven to 175°C and line two rimmed baking sheets with parchment paper.
  2. In a medium-sized bowl, whisk together the vegetable oil, pinch of salt, and eggs (or vegan egg replacer) until well combined.
  3. Add the YesYouCan Essential Chocolate Cake mix to the bowl and mix until fully combined, approximately 2 minutes.
  4. Fold in chocolate chips and refrigerate the dough for 20 minutes.
  5. Take heaping tablespoons of the chilled dough and roll them in your hands to form round balls.
  6. Place each ball about 2 inches apart on the prepared baking sheets. Note that the cookies will spread out during baking, so leave enough space between them.
  7. Bake the cookies in the preheated oven for 10-12 minutes.
  8. Allow the cookies to cool for 10 minutes on the baking sheets before transferring them to a wire rack to finish cooling.
